Morbier – Originally made by the farmers of the Comté for themselves. The curd from the morning milk was ladled into the moulds and a layer of ash sprinkled on top for protection. The curds from the evening milk were added at the end of the day. Washed to develop the characteristic orange, sticky rind and pungent aroma, Morbier is surprisingly mild, with a rich fruity taste and a supple texture.
